  • 2 tablespoons sesame seeds
  • 3/4 cup panko bread crumbs

  • 6 slices fresh pineapple round

  1. Start by preparing your ingredients. In a large bowl, combine the ahi tuna, diced finely. The ahi tuna should be very fresh to ensure the best flavor. Make sure to dice it into small pieces that will hold together when forming the patties. This is where the magic begins!
  2. Add in the soy sauce, light mayonnaise, and Sriracha chili sauce. The soy sauce will infuse the tuna with umami, while the mayonnaise keeps the patties moist. The Sriracha adds a kick—mix it all together until well combined.
  3. Now it’s time to add a binding agent. Crack in the egg and mix thoroughly. The egg is crucial; it holds the mixture together, ensuring your patties don’t fall apart on the grill.
  4. Next, fold in the chopped scallions and fresh grated ginger. These ingredients will add incredible freshness. The green parts of the scallions lend a mild onion flavor, while the ginger introduces an aromatic zest that brightens the whole dish.
  5. Sprinkle in the sesame seeds and panko bread crumbs. The panko helps create a light texture, while the sesame seeds enhance the nutty flavor profile. Mix everything until just combined.
