Ingredients

  • 1 large plantain mostly black with some yellow skin
  • 1 teaspoon avocado oil or any neutral-flavored oil
  • to taste sea salt

Equipment

  • Air Fryer

Method

  1. Slice through just the peel lengthwise and peel the plantain, discarding the skin.
  2. Slice the plantain into your desired shape; I recommend diagonal slices 1/4-inch thick, or 3/4-inch thick coins, and toss with oil and a pinch of salt.
  3. Place plantain pieces in the mesh basket of your air fryer in one layer (do not stack them or they won't crisp up perfectly) and cook on 350°F for 5 minutes.
  4. Flip all the pieces and cook for another 5 to 8 minutes, or until the edges are golden brown and the plantain is soft. Keep an eye on them and adjust the cooking time if needed to prevent burning.

Notes

  • Storage: Store leftover plantains in an airtight container in the refrigerator. They are best enjoyed fresh, but you can reheat them in the air fryer to restore their crispiness.
  • Freezing: You can freeze cooked plantains, but they may lose some texture. To freeze, place them in a single layer on a baking sheet until solid, then transfer to a freezer bag.
  • Pairing: These plantains go wonderfully with black beans, shrimp, or roasted vegetables for a hearty meal.
  • Cooking Time: Adjust cooking times based on your air fryer model, as different brands can vary slightly in temperature and cooking efficiency.
  • Experiment: Feel free to try other oils like coconut oil for a different flavor profile!
