Ingredients

  • 4-5 lb beef roast
  • 1 1/2 cups beef broth
  • 1/2 cup brown sugar
  • 1/4 cup balsamic vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/4 teaspoon crushed red pepper flakes
  • 3 cloves garlic (pressed)
  • 1 lb baby carrots
  • 2 lbs baby red potatoes (quartered)

Equipment

  • Baking Sheet
  • Mixing Bowl
  • Whisk

Method

  1. Start by taking a small bowl and whisking together beef broth, brown sugar, balsamic vinegar, soy sauce, salt, crushed red pepper flakes, and garlic. This mixture is your flavor base, and it should smell delightful as the ingredients come together. Make sure the brown sugar dissolves completely as you whisk, creating a smooth sauce.
  2. Next, place the beef roast in your crock pot. It’s important to choose a good quality roast as this will make a big difference in the final dish. The roast should fit comfortably in the pot without being squished.
  3. Once the roast is in place, top it with the baby carrots and baby red potatoes. The vegetables will soak up all those amazing flavors from the roast and the sauce, making them a tasty side.
  4. Pour your whisked liquid mixture evenly over the roast and veggies, ensuring everything is coated well. This is where the magic happens; the roast will absorb all those scrumptious flavors!
  5. Set your crock pot on low and cook for 6 to 8 hours. As it cooks, the beef will become incredibly tender. You’ll know it’s done when you can easily pull it apart with a fork.
  6. When the cooking time is up, carefully remove the roast, carrots, and potatoes from the crock pot. Let the roast rest for a few minutes before slicing, which helps retain the juices.
  7. Serve the sliced roast with the carrots and potatoes on the side, drizzling some of the cooking liquid over the top for added flavor. The Balsamic Crock Pot Roast is best enjoyed warm, surrounded by family and friends!
  8. Don’t forget to save any leftovers, as they can be used in sandwiches or salads the next day. Enjoy!

Notes

The leftovers are just as delightful. You can use the meat in sandwiches, salads, or even as a topping for baked potatoes. This means the flavors keep giving long after the first meal.
