Ingredients

  • 12 ounces broccolini
  • 1/2 cup finely grated parmesan cheese
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt & pepper to taste

Equipment

  • Oven
  • Baking Sheet
  • Grater

Method

  1. Preheat your oven to 400 degrees Fahrenheit and move the rack to the middle position. Line a baking sheet with foil or parchment paper.
  2. If you notice any dry ends on your broccolini, trim them off for a cleaner presentation. It’s important to keep the stalks intact, as they hold the delicious flavor.
  3. Spread the broccolini out in a single layer on the prepared baking sheet. This allows them to roast evenly, getting that beautiful caramelization.
  4. Drizzle the olive oil and balsamic vinegar generously over the broccolini. This will infuse the vegetables with flavor and help them roast beautifully.
  5. Sprinkle salt and pepper over the top. Don’t be shy; these seasonings will elevate the dish!
  6. Using your hands, gently toss the broccolini to ensure every piece is well-coated in the oil and vinegar mixture. This step is key to achieving that perfect taste.
  7. Once coated, sprinkle the parmesan cheese evenly on top of the broccolini. As it roasts, it will melt and form a delicious crust.
  8. Place the baking sheet in the preheated oven and roast for 15 minutes. Keep an eye on them; you want them to be tender-crisp, not mushy.
  9. When they’re ready, the broccolini should be bright green and slightly browned on the edges. Remove from the oven and serve immediately for the best flavor and texture.

Notes

  • Tip: If your oven runs hot, you may want to give it less than 15 minutes.
