Ingredients
  

  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup mashed ripe bananas
  • 1 cup milk
  • 0.25 cup brown sugar
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter

Method
 

  1. In a large bowl, whisk together flour, baking powder, and salt.
  2. In another bowl, whisk together mashed ripe bananas, milk, brown sugar, egg, and vanilla extract until smooth.
  3. Create a well in the center of the dry mixture and pour in the wet ingredients. Stir gently until just combined.
  4. Gently fold in melted butter.
  5. Heat a griddle or frying pan over medium-high heat.
  6. Pour or scoop the batter onto the hot griddle, using ¼ cup for each pancake.
  7. When bubbles start to form on the surface, flip the pancakes and brown the second side.
  8. Repeat with remaining batter, then serve hot with butter and maple syrup.

Notes

  • Baking powder: This chemical leavener generates bubbles in the pancake batter to help make them light and fluffy.
  • Bananas: Use fully-ripe or slightly overripe bananas (brown spots mean naturally sweet!).
  • Milk: Any milk alternative will do, such as almond or oat milk.
  • Oiling the skillet: If you love crispy edges, lightly grease your skillet with oil or butter.
  • Storage: Store leftovers covered in the refrigerator for up to 4 days.
