Ingredients
  

  • 115 ounces canned chili with beans
  • 18 ounces canned tomato sauce
  • 8-10 pieces flour tortillas (soft taco size)
  • 2-3 cups shredded cheddar cheese

Method
 

  1. Start by gathering all your ingredients and preheating your oven to 350°F.
  2. In a bowl, stir together the chili with beans and tomato sauce. This will create a flavorful base.
  3. Scoop some of the mixture into the bottom of a 9x9” pan to prevent sticking.
  4. Layer a tortilla on top, followed by more chili mixture and a sprinkle of cheese.
  5. Continue layering until all ingredients are used, finishing with cheese on top.
  6. Cover the casserole with foil and refrigerate for at least 3 hours.
  7. Remove from refrigerator and let sit for 10 minutes before baking.
  8. Bake for 30 to 40 minutes until cheese is melted, uncovering in the last 10 minutes for a golden finish.
  9. Or, microwave in 5-minute increments until hot and melted.

Notes

  • Make a vegetarian tortilla casserole: by using vegetarian chili.
  • Shred your own cheese: packaged shredded cheese doesn’t melt very well.
  • Use lower fat tortillas: if you prefer a lighter version.
  • Chili options: can be with or without beans.
