Ingredients
  

  • 4 pieces Sweet Potatoes fist sized
  • ¼ Cup Chicken Stock
  • 4 Tbs Butter whole butter, OK to substitute margarine
  • Cup Dark Brown Sugar
  • 1 Tbs Honey
  • ½ teaspoon Cinnamon
  • ½ teaspoon Kosher Salt
  • Pinch Cayenne Pepper
  • Pinch Black Pepper

Method
 

  1. Peel the sweet potatoes using a vegetable peeler or sharp knife. Cut the potato into cubes.
  2. Place the sweet potato cubes into the saucepan with the chicken stock and set the stove to medium heat.
  3. As the stock begins to boil, add the butter, brown sugar, honey, cinnamon, salt, cayenne, and black pepper. Stir gently and frequently. Add more stock if the liquid starts to cook off.
  4. Continue to cook until you are able to pierce the sweet potato cubes easily with a fork.

Notes

  • Sweet potatoes are hard: Use a very sharp knife when cutting into cubes for safety.
  • Even Cubes: Try to cut the sweet potatoes into even cubes so they cook uniformly.
  • Color Change: Watch for the sweet potatoes as they change color slightly while cooking.
  • Doneness: Ensure you can pierce a cube of sweet potato with a fork to know it's done.
  • Skin Texture: Sweet potato skins can be fibrous and are generally not eaten.
