  • 2¼ cups cups stone-ground whole wheat flour
  • 1¼ cups cups all-purpose flour
  • 1½ teaspoons teaspoons kosher salt
  • ¾ teaspoon teaspoons baking soda
  • 2 cups cups whole buttermilk
  • ¼ cup cups unsulphured molasses
  • 1 large egg egg
  • 3 tablespoons tablespoons steel-cut oats

Method
 

  1. Preheat your oven to 325°F (170°C).
  2. Spray an 8½×4½-inch loaf pan with cooking spray.
  3. In a large bowl, whisk together the stone-ground whole wheat flour, all-purpose flour, kosher salt, and baking soda until well combined.
  4. Make a well in the center of the flour mixture.
  5. In a medium bowl, whisk together the buttermilk, molasses, and egg.
  6. Add the buttermilk mixture to the well in the flour mixture. Using one hand like a claw, gently mix the wet ingredients into the dry ingredients.
  7. Spoon the dough into the prepared pan, and spread it until even.
  8. Sprinkle the top with steel-cut oats.
  9. Bake until deep golden brown and an instant-read thermometer inserted in the center registers 200°F (93°C).
  10. Let cool in the pan for 15 minutes, then remove from the pan; wrap in a clean tea towel to cool on a wire rack.
