Ingredients

  • 1/4 teaspoon vanilla extract
  • 1 teaspoon honey or more to taste
  • 1/4 cup chopped strawberries or kiwi fruit
  • 2 strawberries or 1 kiwi fruit very thinly sliced
  • 2 tablespoons granulated sugar

Method
 

  1. In a medium bowl, combine yogurt, vanilla extract, and honey. Stir gently until all the ingredients are well mixed.
  2. Next, fold in the chopped strawberries or kiwi fruit. This adds bursts of fresh flavor and texture to the creamy mixture.
  3. Divide the yogurt mixture evenly between two 6-ounce ramekins, smoothing the top for an even surface.
  4. Arrange the remaining sliced fruit beautifully on top of the yogurt.
  5. Sprinkle 1 tablespoon of granulated sugar evenly over the top of each ramekin.
  6. Using a kitchen torch, gently heat the surface of the yogurt, moving slowly and constantly.
  7. If the sugar isn't caramelizing, let it cool before sprinkling with more sugar and torching again.
  8. Serve the Brûléed Yogurt with Fresh Fruit immediately for the best texture.
