- Preheat your oven to 250° F. This low temperature is perfect for allowing the pecans to slowly caramelize without burning.
- Line 1 large or 2 small baking sheets with parchment paper or a silicone baking mat. This will ensure that the pecans don’t stick and are easy to remove after baking.
- In a large bowl, whisk together the egg white and cold water. This mixture will help the sugar adhere to the pecans, creating that delightful candy coating.
- Add the pecans to the bowl. Stir gently to coat each pecan thoroughly in the egg white mixture, making sure all nuts are evenly covered.
- In a separate bowl, combine the granulated sugar, ground clove, ground allspice, ground cinnamon, and salt. Mix well so that all the spices are evenly distributed in the sugar.
- Sprinkle the sugar and spice mixture over the coated pecans. Gently stir to ensure every pecan is well-coated with the sweet mixture.
- Spread the pecans evenly on the prepared baking sheet(s). Make sure they are in a single layer for even baking.
- Bake in the preheated oven for 1 hour, stirring every 20 minutes. This helps to ensure even cooking and prevents the sugar from burning.
- Once done, immediately loosen the pecans from the baking sheets by shaking or using a spatula. This prevents them from sticking as they cool.
- Allow the pecans to cool completely before storing them in an airtight container. They will crisp up as they cool, making them even more delicious!
