  • 1 tsp Baking Soda
  • 1 tsp Cinnamon
  • 3/4 tsp Baking Powder
  • 3/4 tsp Salt
  • 1/8 tsp Nutmeg optional
  • 1.5 cups Mashed Overripe Banana
  • 1/2 cup Finely Shredded Carrot
  • 1/2 cup Pure Maple Syrup
  • 1/4 cup Milk of Choice or water
  • 1/4 cup Oil or additional water
  • 2 tsp Pure Vanilla Extract
  • 1/2 cup Crushed Walnuts optional

Equipment

  • Oven
  • Baking Sheet
  • Frying Pan
  • Wooden Spoon
  • Whisk
  • Chef's Knife

Method

  1. Preheat your oven to 350 degrees Fahrenheit. This is crucial for achieving the perfect bake.
  2. Grease a 9x5-inch loaf pan or line it with parchment paper.
  3. In a large mixing bowl, combine the dry ingredients: the flour, baking soda, cinnamon, baking powder, and salt. Whisk them together until evenly mixed.
  4. In another bowl, whisk together the wet ingredients: the mashed banana, shredded carrot, maple syrup, milk, oil, and vanilla extract. Mix until well combined.
  5. Pour the wet mixture into the dry mixture. Stir gently until just combined.
  6. Transfer the batter into the prepared loaf pan.
  7. Bake in the preheated oven for 45 minutes.
  8. Once baked, remove the loaf from the oven and allow it to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  9. For the best flavor, cover and refrigerate the bread overnight.
