Ingredients
  

  • 1 Asparagus Trimmed
  • 0.5 Red Onion Sliced vertically into thin strips
  • 2 tablespoons Olive Oil
  • 1 Kosher Salt
  • 1 Black Pepper Freshly ground
  • 1.5 cups Mozzarella Cheese Shredded

Method
 

  1. Preheat oven to 425F. Line a baking sheet with foil for easier cleanup.
  2. Add the asparagus and onions to the baking sheet, evenly drizzle with olive oil, evenly sprinkle with salt and pepper, and use your hands to toss to coat evenly.
  3. Bake for about 12 to 15 minutes, or until asparagus is crisp-tender.
  4. Remove baking sheet from the oven, evenly sprinkle the cheese over the middle section of the asparagus, and return the baking sheet to the oven for about 5 minutes, or until cheese has melted.
  5. Alternatively, place the baking sheet under the broiler on high for about 3 to 4 minutes if you prefer your cheese to be more golden browned rather than simply just melted.
  6. If you’re using the broiler, keep a very close eye on things since food can burn very quickly under the broiler.
  7. Recipe is best warm and fresh.

Notes

  • Storage: Store any leftover asparagus in an airtight container in the fridge for up to three days. Reheat gently in the oven to maintain the cheese's texture.
  • Freezing: While it’s best fresh, you can freeze leftover asparagus. Just make sure to cool it completely and store in a freezer-safe container. It may lose some texture when thawed.
