Ingredients
  

  • ½ cup bottled Italian dressing
  • 1 Tbsp chili powder
  • 1 tsp ground cumin
  • ½ tsp brown sugar
  • ½ tsp pepper
  • ¼ tsp salt
  • tsp garlic powder
  • tsp chipotle seasoning
  • 4 boneless skinless chicken breasts or 2 lb skirt/flank steak

Equipment

  • Cast Iron Grill Pan
  • 10-inch Cast Iron Skillet
  • Mixing Bowls
  • Meat thermometer

Method
 

  1. Whisk together the first 8 ingredients.
  2. Pour marinade into a large zip-top plastic freezer bag, and add chicken breasts or steak; seal bag.
  3. Chill for 2 hours.
  4. Grill chicken for 15 to 18 minutes or until done. Grill skirt steak for 3 minutes per side for medium-rare. Grill flank steak about 8 minutes per side.
  5. Remove from grill, and let stand for 10 minutes.
  6. Cut diagonally into 1/4-inch-thick strips.
  7. Serve with tortillas, sour cream, salsa, lettuce, etc.

Notes

  • Omit sugar: For a low-carb dish.
