- Start by gathering all your ingredients. Place the olive oil, soy sauce, lemon zest, brown sugar, chopped parsley, minced garlic, salt, black pepper, honey, chopped thyme, and lemon juice in a large mixing bowl.
- Using a whisk, combine the ingredients thoroughly until the marinade is well blended. The brown sugar should dissolve completely, and the mixture should be smooth.
- Next, take a glass container with a tight-fitting lid or a large ziplock bag. Pour the marinade into the container.
- Add the chicken thighs to the marinade, ensuring they are fully submerged. If using a ziplock bag, seal it tightly and massage the chicken to coat it evenly.
- Place the container in the refrigerator and let it marinate for at least 12 hours. This allows the flavors to penetrate the chicken and makes it incredibly tender.
- After marinating, remove the chicken thighs from the marinade and let them drain. Discard the leftover marinade as it has been in contact with raw meat.
- At this point, you can choose your cooking method. Whether you plan to fry, grill, or bake, preheat your cooking appliance accordingly.
- If grilling, heat your grill to medium-high. Place the chicken thighs on the grill and cook for 6 to 8 minutes per side, or until they reach an internal temperature of 165 degrees Fahrenheit.
- For baking, preheat the oven to 400 degrees Fahrenheit. Place the chicken thighs in a baking dish and bake for 25 to 30 minutes, or until cooked through.
- Once cooked, remove the chicken from heat and let it rest for a few minutes before serving. This helps retain the juices inside the chicken.

Notes
Leftover marinated chicken can be stored in the refrigerator for up to three days. You can freeze the marinated chicken thighs before cooking for up to three months. Just thaw in the refrigerator before cooking.
