- Preheat your oven to 450℉. This high temperature is essential for achieving that perfect crisp on the tortillas.
- Line two cookie sheets with 6 corn tortillas each. Make sure they’re spaced out to allow even cooking.
- Brush all the tortillas with a light layer of oil on both sides. This helps them bake beautifully and get that golden brown color.
- Bake the tortillas for 8 to 10 minutes, flipping halfway through. Watch for them to become crisp without burning; you want them golden.
- Remove the tortillas from the oven and reduce the temperature to 350℉. This lower temperature will help melt the cheese without overcooking everything.
- While the tortillas are cooking, combine the chicken, salsa, and taco seasoning in a medium bowl. Mix them well so that the chicken is evenly coated with flavor.
- Spread about 1 to 2 tablespoons of refried beans on each tortilla. This will create a delicious layer that holds everything together.
- Divide the chicken mixture evenly on the tortillas. Make sure to get a good amount on each one for the best flavor.
- Sprinkle cheese evenly on top of all the tortillas. It’s okay to be generous; everyone loves melted cheese!
- Bake for another 3 to 5 minutes or until the cheese melts. Keep an eye on them so the cheese is perfectly gooey but not burnt.
- Once done, take them out and let them cool for a moment. Top with your choice of sour cream, pico de gallo, tomatoes, guacamole, cilantro, or avocado for that fresh finish.
