Ingredients
  

  • 12 tortillas corn tortillas 6-inch size for perfect crunch
  • 2 tablespoons canola or vegetable oil For brushing the tortillas
  • 1.5 cups cooked and shredded chicken The main protein for the dish
  • 0.5 cups salsa Adds flavor and moisture
  • 2 tablespoons taco seasoning For seasoning the chicken
  • 1 can refried beans Creamy layer on the tortillas

Method
 

  1. Preheat your oven to 450℉. This high temperature is essential for achieving that perfect crisp on the tortillas.
  2. Line two cookie sheets with 6 corn tortillas each. Make sure they’re spaced out to allow even cooking.
  3. Brush all the tortillas with a light layer of oil on both sides. This helps them bake beautifully and get that golden brown color.
  4. Bake the tortillas for 8 to 10 minutes, flipping halfway through. Watch for them to become crisp without burning; you want them golden.
  5. Remove the tortillas from the oven and reduce the temperature to 350℉. This lower temperature will help melt the cheese without overcooking everything.
  6. While the tortillas are cooking, combine the chicken, salsa, and taco seasoning in a medium bowl. Mix them well so that the chicken is evenly coated with flavor.
  7. Spread about 1 to 2 tablespoons of refried beans on each tortilla. This will create a delicious layer that holds everything together.
  8. Divide the chicken mixture evenly on the tortillas. Make sure to get a good amount on each one for the best flavor.
  9. Sprinkle cheese evenly on top of all the tortillas. It’s okay to be generous; everyone loves melted cheese!
  10. Bake for another 3 to 5 minutes or until the cheese melts. Keep an eye on them so the cheese is perfectly gooey but not burnt.
  11. Once done, take them out and let them cool for a moment. Top with your choice of sour cream, pico de gallo, tomatoes, guacamole, cilantro, or avocado for that fresh finish.
  12. Serve warm, and enjoy every crunchy, flavorful bite!

Notes

When storing, keep toppings separate to prevent sogginess. You can also freeze the chicken mixture for future use.
