Ingredients

  • 4 cups cooked chopped chicken
  • 4 (8.8-oz) bags Ben's Ready White & Wild Rice
  • 1 (10.5-oz) can Unsalted Cream of Chicken Soup
  • 1 (10.5-oz) can Unsalted Cream of Mushroom Soup
  • 8 oz sour cream
  • 1 cup milk
  • 6 oz shredded parmesan cheese
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • salt & pepper to taste
  • sleeves Ritz crackers, crushed
  • ½ cup butter, melted

Equipment

  • Chef Knives
  • Cutting Board
  • Mixing Bowls
  • 9×13-inch baking dish

Method

  1. Preheat your oven to 350°F. It’s important to let your oven heat up completely to ensure even cooking. Choose a good quality 9×13-inch baking dish and lightly spray it with cooking spray. This will prevent the casserole from sticking.
  2. In a large bowl, combine the chopped chicken, prepared wild rice, cream of chicken soup, cream of mushroom soup, sour cream, milk, shredded parmesan cheese, garlic powder, onion powder, and season with salt and pepper. Mix all these ingredients well until they are fully combined and creamy.
  3. Take the mixture and spread it evenly into your prepared baking dish. Make sure it’s distributed evenly so that every bite has a good mixture of flavors.
  4. In a separate bowl, combine the crushed Ritz crackers with the melted butter. Mix until the crackers are fully coated. This will ensure they become golden and crispy while baking.
  5. Sprinkle the cracker mixture evenly over the top of the casserole. This topping will create a delightful crunch that contrasts perfectly with the creamy filling.
  6. Place the baking dish in the preheated oven. Bake uncovered for 40 to 50 minutes, until the casserole is bubbly and the topping is golden brown. You should see the edges bubbling slightly, indicating that it’s cooked through.
  7. Once baked, remove the casserole from the oven and let it cool for a few minutes before serving. This helps everything to set slightly, making it easier to serve.
  8. Serve warm, and enjoy the delightful flavors of your homemade Chicken Wild Rice Casserole!

Notes

  • Storage: Ensure to store leftovers in an airtight container. This will keep them fresh and tasty for longer.
  • Freezing: You can freeze the casserole before baking. Just assemble it in the dish, cover tightly, and freeze. When ready to bake, thaw completely and then bake according to the recipe.
  • Variations: Add in veggies like broccoli or spinach for additional nutrition. You can also swap the chicken for shredded turkey if you have leftovers!
  • Serving Size: This casserole serves well as a main dish, but it can also be a hearty side for holiday meals.
  • Spice It Up: If you enjoy a little heat, consider adding a pinch of cayenne pepper or some diced jalapeños to the mixture.
