  • 0.5 tablespoon Chipotle in adobo sauce Or 1 full tbsp to make it spicier, from 1 can
  • 1 teaspoon Ancho chile powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano

Method
 

  1. Season the chicken thighs generously with salt and pepper on both sides. In a mixing bowl, combine the minced garlic, chipotle in adobo sauce, ancho chile powder, ground cumin, and dried oregano. Rub this spice mixture evenly over the chicken thighs, ensuring they are thoroughly coated. Let them sit for a few minutes to meld the flavors.   2. Preheat a large skillet or griddle over medium-high heat and spray with oil. Once hot, place the seasoned chicken thighs in the skillet and cook for about 6 minutes per side or until browned and the internal temperature reaches 165°F. Remove the chicken from the skillet and let it rest for a few minutes before serving.
  3. If grilling, preheat your grill or grill pan to medium-high heat and grease the grates. Place the chicken thighs on the grill and cook for about 6-8 minutes per side until fully cooked. Let them rest before serving.
  4. For air frying, preheat the air fryer to 400°F and place the chicken in a single layer. Cook for 14-15 minutes, flipping halfway through. Ensure it reaches 165°F before serving.
