Ingredients
  

  • 3 cups shredded rotisserie chicken
  • 1 can (10-ounce) enchilada sauce
  • 1/2 cup chunky salsa
  • 1/3 cup water
  • 1/2 cup canned black beans
  • 1 can (4-ounce) canned diced green chilies
  • 2 chipotle peppers in adobo sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • salt and pepper
  • 4 medium flour tortillas
  • 1 1/2 cups shredded Mexican cheese blend
  • sliced green onion for serving
  • cilantro for serving
  • sour cream for serving
  • salsa for serving

Method
 

  1. Add the first 10 ingredients to a large skillet and bring to a simmer. Simmer for 3 to 4 minutes. Check for seasoning and add salt and pepper to taste.
  2. Stir in the tortilla pieces. Cook for 2 minutes.
  3. Sprinkle cheese on top. Turn heat to low and cover until cheese is melted.
  4. To serve, top with sliced green onion, cilantro, sour cream, and salsa.

Notes

  • Tip 1: You can use corn tortillas instead of flour.
