Stir occasionally until the onion becomes translucent, which should take about 5 minutes. The aroma will start to fill your kitchen, and you'll know it’s time for the next step.
Next, add the chopped bell pepper to the mix. Sauté for another 3 to 4 minutes until the pepper softens slightly. The vibrant colors will brighten up your pot.
Now, pour in the diced tomatoes along with their juices and add the beans. Stir everything together well. Cook this mixture for about 3 minutes, letting the flavors meld.
Once combined, it's time to add the sliced Chipotle Field Roast Sausages to the pot. Pour in enough water to cover the contents—about 3 cups should do it—and add the vegetable bouillon cube. Stir again to combine.
Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for about 20 minutes. During this time, the vegetables will become tender, and the flavors will develop beautifully.
After 20 minutes, remove the pot from heat. Add the chili powder and cumin powder, mixing them in thoroughly. Then, gently stir in about three-quarters of the chopped cilantro. This is where the chili really comes alive!
