Ingredients

  • 1 1/2 lbs. (700g) Chicken thighs
  • Lime wedges
  • Chopped cilantro
  • 3 tablespoons Olive oil
  • 4 cloves Garlic
  • 4 tablespoons Cilantro stems and leaves
  • 2 tablespoons Lime juice
  • 1 teaspoon Red chili flakes
  • 1/2 teaspoon Salt

Equipment

  • Skillet
  • Wooden Spoon
  • Chef's Knife
  • Whisk
  • Baking Sheet
  • Oven
  • Frying Pan

Method

  1. Preheat your oven to 375°F (190°C). This step ensures that your chicken will cook evenly, achieving that perfect golden-brown finish.
  2. In a large bowl, whisk together all the marinade ingredients: olive oil, lime juice, minced garlic, chopped cilantro stems, and red chili flakes. The goal is to create a cohesive mixture that evenly coats the chicken.
  3. Add the chicken thighs to the marinade, making sure to stir and coat them evenly. The marinating process is essential for infusing the flavors.
  4. Let the chicken marinate for about 15 minutes. For optimal flavor, consider letting it sit for up to 2 hours in the refrigerator.
  5. After marinating, heat a skillet over medium-high heat. Pan-fry the chicken skin-side down for about 5 to 7 minutes, until it's slightly browned and crispy. This step adds a delicious texture to the dish.
  6. Flip the chicken over and cook the other side for an additional 5 minutes. You're looking for a nice golden color on both sides.
  7. Once browned, spoon the remaining marinade over the chicken. This will help keep it moist while baking.
  8. Transfer the skillet to the preheated oven and bake the chicken for 20 minutes. Keep an eye on it; the internal temperature should reach at least 165°F (75°C).
  9. After baking, carefully remove the chicken from the oven and transfer it to a serving platter, discarding any oily drippings. This ensures a cleaner flavor.
  10. Finish by squeezing fresh lime juice over the chicken and garnishing with chopped cilantro. Serve immediately and enjoy your flavorful creation!

Notes

  • Tip 1: Use an oven-safe skillet or pan to bake the chicken in the oven.
  • Tip 2: Grilling is also an option for cooking the chicken.
  • Tip 3: Use chicken thighs, which are more tender, moist and juicy.
  • Tip 4: Use freshly squeezed lime juice if you can.
  • Tip 5: Use lots of cilantro stems and some cilantro leaves as there is a lot of flavors in the stems.
  • Tip 6: Pan-fry the chicken on a skillet first, to make sure that the skin is browned and crispy before baking the chicken in the oven.
  • Tip 7: After baking, spoon the marinade over the chicken to make it extra flavorful and moist.
