Ingredients

  • 4 chicken thighs bone-in and skin-on
  • 1 orange 1/2 juiced and 1/2 sliced
  • 1 lemon 1/2 juiced and 1/2 sliced
  • 1 lime 1/2 juiced and 1/2 sliced
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon minced fresh rosemary
  • 2 teaspoons fresh thyme leaves
  • Kosher salt to taste
  • pepper to taste

Equipment

  • Chef's Knife
  • Mixing Bowl
  • Whisk
  • Baking Sheet
  • Oven

Method

  1. Preheat your oven to 400 degrees. This step is crucial as it ensures that the chicken gets that perfect crisp on the skin.
  2. Leave the skin on the chicken thighs but trim off any excess skin or fat and set aside. This helps with even cooking and enhances flavor.
  3. In a medium mixing bowl, add the juices from the orange, lemon, and lime. Whisk in the olive oil, minced rosemary, and thyme leaves. The mixture should smell incredible!
  4. Add in the chicken and toss to coat in the juice and spices. Make sure every piece gets a good amount of that aromatic marinade.
  5. In an 8x8 casserole dish, add the citrus slices to the bottom. This not only adds flavor but also creates a delicious bed for the chicken to sit on while roasting.
  6. Place the chicken onto the top of the citrus slices and pour the marinade over the top. Let those flavors mingle!
  7. Season the tops of the chicken with Kosher salt and pepper to taste. Don’t be shy; seasoning is key!
  8. Roast for about 60 minutes until the top of the skin is crispy and the chicken is fully cooked, reaching an internal temperature of 160 degrees. You’ll want to see that beautiful golden crust.
  9. Remove the chicken from the oven and let it rest for 5 minutes. This allows the juices to redistribute, ensuring each bite is tender and juicy.
  10. Serve hot, and enjoy the fruits of your labor with loved ones!

Notes

Store leftovers in an airtight container in the fridge for up to three days. Yes, you can freeze the cooked chicken. Just ensure it’s properly sealed to avoid freezer burn.
