Ingredients
  

  • 2 cups Water
  • 1 1/2 cups Canned unsweetened coconut milk shake the can before using
  • 2 tsp Light brown sugar packed
  • 1 tsp Salt
  • 2 cups Jasmine rice about 13 oz., well rinsed and drained
  • 1/2 cup Sweetened flaked coconut optional, lightly toasted

Method
 

  1. Combine 2 cups water, coconut milk, light brown sugar, and salt in a large saucepan. Bring to a simmer, then stir in rice.
  2. Return to a gently boil, cover, reduce heat, and simmer for 15 minutes.
  3. Remove from heat and let stand for 10 minutes. Remove lid and fluff rice gently with a fork.
  4. Transfer rice to a bowl; sprinkle with toasted coconut.

Notes

  • Tip 1: Substitute Basmati Rice with equal amount without changes.
  • Tip 2: Substitute Long-Grain White Rice with equal amount without changes.
  • Tip 3: For Brown Rice, follow the same instructions but cook for 50 minutes instead of 15.
