  • ½ teaspoon Baking Powder

  • ½ cup Unsalted Butter
  • 1 cup Granulated Sugar
  • 1 large Egg
  • 1 teaspoon Vanilla Extract
  • 1 and ½ Tablespoon Instant Coffee Granules
  • 1 cup Dark or Semi-Sweet Chocolate Chips

Method
 

  1. In a large mixing bowl, whisk together flour, baking soda, baking powder, and salt until well combined.
  2. In another large mixing bowl, combine butter and granulated sugar. Beat until light and fluffy, about 2 minutes.
  3. Add coffee granules and mix well.
  4. Add egg and vanilla extract. Mix until combined.
  5. Add the dry ingredients all at once and mix for about 5 seconds.
  6. Fold in the chocolate chips gently until incorporated.
  7. Wrap the dough in plastic wrap and chill in the fridge for at least 2 hours.
  8. Preheat the oven to 375°F.
  9. Line a cookie sheet with parchment paper. Scoop cookie dough onto the sheet.
  10. Bake for 8 to 10 minutes until the edges are golden. Cool on the sheet for 5 minutes before transferring to a wire rack.
