Ingredients
  

  • 4 Boneless Skinless Chicken Breasts
  • 2 cups Water
  • 2 cubes Chicken Bouillon
  • 1/4 teaspoon Seasoned Salt
  • 1 cup All-Purpose Flour
  • 1 1/2 cups Finely Crushed Saltine Cracker Crumbs
  • 2 teaspoons Powdered Sugar
  • 1/4 teaspoon Paprika
  • 4 Hamburger Buns
  • 8 Dill Pickles
  • 2 tablespoons Butter
  • Peanut Oil for Frying You can use vegetable oil.

Method
 

  1. Start by placing the cool water in a bowl. Add 1/4 teaspoon seasoned salt and the 2 cubes chicken bouillon. Stir until the bouillon is dissolved. This mixture will serve as a flavorful marinade for the chicken.
  2. Take the 4 boneless skinless chicken breasts and place them in the marinade. Ensure they are fully submerged. Cover the bowl and place it in the refrigerator. Allow the chicken to marinate for at least 12 hours or overnight for maximum flavor.
  3. When ready to cook, pour off the marinade and discard it. You won’t need it again, so don’t worry about saving it.
  4. In a shallow dish, combine the 1 cup all-purpose flour, 1 1/2 cups finely crushed saltine cracker crumbs, 2 teaspoons powdered sugar, and 1/4 teaspoon paprika. Stir the mixture until well combined.
  5. Remove the marinated chicken from the bowl. Shake off any excess marinade, then dredge each piece of chicken into the seasoned flour mixture. Make sure each piece is thoroughly coated.
  6. After dredging, rest the breaded chicken breasts on a wire rack. Allow them to sit for a few minutes. This helps the coating adhere better during frying.
  7. In a large pot or deep fryer, heat the peanut oil to 350 degrees Fahrenheit. If using a pot, ensure there’s enough oil to be about 4 inches deep.
  8. Carefully place the breaded chicken into the hot oil. Cook for about 7 to 8 minutes. You’re looking for a beautiful golden-brown color and an internal temperature of 165 degrees Fahrenheit. Use a meat thermometer to be sure.
  9. Once cooked, remove the chicken from the oil and drain it on a clean wire rack. This keeps the coating crisp without getting soggy.
  10. Melt the 2 tablespoons butter and brush it generously on the hamburger buns. This step adds delicious flavor and makes the buns golden.
  11. To assemble, lay one crispy chicken breast on each bottom bun. Top with 2 dill pickle chips, and then place the top bun on.
