Ingredients

  • 1.5 pounds chicken tenders
  • 0.5 cup milk
  • 2 large eggs
  • 4 cups Corn Flakes cereal
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon black pepper
  • 1 spray cooking spray
  • 0.5 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon minced onion
  • 1 tablespoon sweet relish
  • 1 pinch kosher salt

Equipment

  • Baking Sheet
  • Food Processor

Method

  1. Preheat your oven to 350℉. This is an important step to ensure even cooking and browning of your chicken tenders.
  2. In a shallow dish, combine ½ cup milk and 2 large eggs. Whisk them together until well blended. This will create a wet batter that helps the cornflake coating stick to the chicken.
  3. In a food processor, add 4 cups Corn Flakes cereal, 1 tablespoon chopped fresh parsley, 1 teaspoon smoked paprika, ½ teaspoon kosher salt, and ¼ teaspoon black pepper. Process until the mixture resembles breadcrumbs. Pour this mixture into a second shallow dish.
  4. Take one chicken tender at a time and dip it into the egg mixture, ensuring it's coated on all sides. Then, transfer it to the cornflake mixture, pressing gently to ensure a good coating. Place the coated chicken tenders on a baking tray lined with parchment paper.
  5. Repeat the process with the remaining chicken tenders, making sure they are all evenly coated. This helps achieve that crispy texture everyone loves.
  6. Lightly spray the tops of the chicken tenders with cooking spray. This will help them develop a beautiful golden-brown crust while baking.
  7. Place the tray in the oven and bake for 15 minutes or until the chicken is golden and cooked through. Keep an eye on them to avoid over-baking.
  8. While the chicken is baking, prepare the special dipping sauce. In a bowl, mix together ½ cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon minced onion, 1 tablespoon sweet relish, and a pinch of kosher salt. Stir until well combined.
  9. Once the chicken tenders are done, remove them from the oven and let them cool slightly before serving. Pair them with the dipping sauce and enjoy!

Notes

  • Tip 1: Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the oven for crispy results.
  • Tip 2: You can freeze the uncooked, coated chicken tenders. Just ensure they're in a single layer on a baking sheet until frozen, then transfer to a freezer bag.
  • Tip 3: These tenders pair wonderfully with fresh salads or crispy vegetables. Try serving with a side of sweet potato fries or coleslaw!
  • Tip 4: You can prepare the chicken tenders in advance and store them in the fridge before baking. This is a great time-saver!
  • Tip 5: Get the kids involved! Let them help with the coating process to make cooking a fun family activity.
