- Begin by greasing a 9 x 13 baking dish with some of the coconut oil. This will prevent the porridge from sticking when it’s time to serve. Set the dish aside as you move on to the next steps.
- In a large pot, heat the remaining coconut oil over medium heat. Once it's melted, add the ground cinnamon, ground cardamom, ground ginger, and ground cloves. Stir the spices in the oil for about 3 to 4 minutes until they become fragrant and lose their raw smell.
- Next, add the steel cut oats, quinoa, and buckwheat groats to the pot. Stir the mixture well, ensuring that all the grains are evenly coated with the spiced oil. You should be able to smell the oats toasting, becoming nuttier as they cook. Keep this stirring action going for about 4 minutes.
- Once the grains are toasted, slowly pour in the boiling water, stirring the mixture simultaneously. This will ensure everything is well combined and help avoid clumps. If necessary, scrape the bottom of the pot to release any stuck grains.
- As the grains absorb the water, begin adding the warm milk in increments of three-quarters to one cup. Once the mixture reaches a simmer, lower the heat and let it sit on the side. Keep adding milk as the grains absorb it, stirring frequently to maintain a creamy consistency.
- After all the milk has been incorporated and the porridge has reached your desired consistency, it's time to add in the dried currants and vanilla extract. Stir everything together until well combined.
- Next, scrape the mixture into the greased baking dish, smoothing it out evenly. Allow the porridge to cool at room temperature for about an hour before covering it and placing it in the refrigerator to cool completely. This will help it set.
- After it has cooled, cut the porridge into 10 even portions for serving. This makes it easy to grab a slice for breakfast or a snack.
- To serve, take one portion from the dish and place it in a small saucepan. Add a heavy splash of milk or water over it and heat it over medium heat. Use the back of a wooden spoon to break up the porridge until it returns to a creamy consistency, which should only take about 2 minutes.
- Serve your Cozy Multigrain Porridge with a drizzle of maple syrup and your choice of fresh fruit or chopped nuts. You can also sweeten the porridge while it’s heating, depending on your taste preference.
Notes
Toasting the grains in warmed spices and oil enhances their flavor significantly. Feel free to use all oats if you like; the amount of liquid would stay the same. All quinoa or buckwheat? Use double the amount of liquid (i.e., 1 cup grain: 2 cups liquid).
