Ingredients
  

  • 30 medium button mushrooms (about 1 1/2 pounds)
  • 8 ounces cream cheese softened
  • 1 1/4 cups shredded smoked cheddar cheese
  • 1/4 cup roasted red pepper drained and diced
  • 2 tablespoons grated onion
  • 1 clove garlic minced
  • 1/3 cup grated Parmesan cheese
  • Salt
  • Pepper

Method
 

  1. Preheat your oven to 350 degrees F and set out a 9×13-inch baking dish. This will be where your delicious mushrooms will bake to perfection.
  2. Gently pop off the stems of the mushrooms, discarding them or saving for later use. Use a damp paper towel to brush away any dirt, but avoid rinsing them under water as they can absorb moisture.
  3. In a medium bowl, mix together the cream cheese, smoked cheddar cheese, roasted red pepper, grated onion, and garlic. Add a pinch of salt and black pepper to taste. Stir until everything is well combined and creamy.
  4. Using a spoon, carefully pack the cavity of each mushroom with the cheese filling. Don’t worry if it slightly overflows; this adds character, but be careful not to overfill to prevent a mess.
  5. Press each stuffed top lightly into grated Parmesan cheese to create a crust, then place them cheese-side-up in the prepared baking dish. It’s perfectly fine if they’re snug in the dish; they’ll shrink while baking.
  6. Bake in the preheated oven for 30 to 35 minutes until the tops are puffed and golden. You’ll know they are ready when the kitchen fills with the most irresistible aroma.
