- Heat a pan over medium-high heat then add a little olive oil and the chicken pieces. Season with salt and pepper and cook until golden brown on both sides.
- Add the cherry tomatoes and garlic, and sauté for an additional 2 minutes.
- Add the spinach, heavy cream, chicken broth, and oregano. Season with additional salt and pepper if needed. Simmer until the sauce thickens slightly.
- Remove from heat. Sprinkle with grated Parmesan, stir to combine, and serve warm.
