Ingredients
  

  • 1 cup plain Dannon® Oikos® Greek Nonfat Yogurt
  • 1 avocado, mashed
  • 1-2 tablespoons fresh lemon juice
  • Kosher salt and freshly ground black pepper
  • 2 cups cooked and shredded chicken (from about 16 ounces of skinless, boneless breast)
  • ¾ cup celery (about 2 ribs), chopped
  • ½ cup red grapes, halved
  • ¾ cup pecans, chopped
  • ¾ cup red onion, chopped
  • ¾ cup dried cranberries, (optional)
  • 2 tablespoons chopped fresh tarragon

Method
 

  1. In a small bowl, combine the Greek yogurt with the mashed avocado. Add fresh lemon juice to taste, and don’t forget to season with Kosher salt and freshly ground black pepper. Mix it well until all ingredients are smoothly blended.
  2. Next, take a large bowl and add the cooked and shredded chicken. Make sure it’s well shredded to mix evenly later. Add in the chopped celery, halved red grapes, and if you’re using them, the chopped pecans, chopped red onion, and the optional dried cranberries. The variety of textures and flavors in this mix will make the salad exciting.
  3. Now, gently fold the yogurt avocado sauce into the chicken mixture. Make sure everything is well coated but be gentle to maintain the integrity of the grapes and pecans.
  4. After that, taste your salad and adjust the seasoning with more Kosher salt and freshly ground black pepper if needed. This is your chance to make it perfect!
