- In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Once the mixture is hot and bubbly, it’s time to add your chicken!
- Before you add the chicken, season both sides of the chicken breasts with salt and pepper to your taste. This simple step enhances the flavor of the chicken immensely.
- Dredge each chicken breast in 1/4 cup of all-purpose flour, making sure to coat it evenly. This will create a beautiful golden crust when cooked.
- Carefully place the floured chicken into the hot skillet. Sear for about 3 minutes on each side, until the chicken is cooked through and no longer pink in the center. Once done, transfer the chicken to a plate and set aside.
- Reduce the skillet heat to medium-low, and add 1 cup of chicken broth, along with the juice from both lemons. Stir well, scraping up any bits from the bottom of the pan.
- Add 3/4 cup of heavy cream and 1/4 cup of capers to the skillet. Bring the sauce to a gentle boil, then lower the heat and let it simmer for about 3 minutes, allowing the flavors to meld together.
- Taste the sauce and season with additional salt and pepper as needed. The sauce should be creamy and tangy, with a perfect balance of flavors.
- Return the cooked chicken breasts to the skillet, spooning the sauce over the top. Let everything simmer together for a couple of minutes to heat through.
- While the chicken is simmering, cook 1 pound of angel hair pasta according to the package instructions. Drain and keep warm.
- To serve, place the cooked pasta on plates and top with the creamy chicken and sauce. Don’t forget to sprinkle with freshly chopped parsley for a finishing touch!
