Ingredients
  

  • 4 Chicken Breasts Whole Boneless Skinless
  • Salt and Pepper to taste
  • 1/4 cup All-Purpose Flour
  • 2 Tablespoons Butter
  • 2 Tablespoons Olive Oil
  • 1 cup Chicken Broth
  • 2 Lemons whole
  • 3/4 Cup Heavy Cream
  • 1/4 cup Capers
  • Parsley for garnish, chopped
  • 1 pound Angel Hair Pasta

Method
 

  1. In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat. Once the mixture is hot and bubbly, it’s time to add your chicken!
  2. Before you add the chicken, season both sides of the chicken breasts with salt and pepper to your taste. This simple step enhances the flavor of the chicken immensely.
  3. Dredge each chicken breast in 1/4 cup of all-purpose flour, making sure to coat it evenly. This will create a beautiful golden crust when cooked.
  4. Carefully place the floured chicken into the hot skillet. Sear for about 3 minutes on each side, until the chicken is cooked through and no longer pink in the center. Once done, transfer the chicken to a plate and set aside.
  5. Reduce the skillet heat to medium-low, and add 1 cup of chicken broth, along with the juice from both lemons. Stir well, scraping up any bits from the bottom of the pan.
  6. Add 3/4 cup of heavy cream and 1/4 cup of capers to the skillet. Bring the sauce to a gentle boil, then lower the heat and let it simmer for about 3 minutes, allowing the flavors to meld together.
  7. Taste the sauce and season with additional salt and pepper as needed. The sauce should be creamy and tangy, with a perfect balance of flavors.
  8. Return the cooked chicken breasts to the skillet, spooning the sauce over the top. Let everything simmer together for a couple of minutes to heat through.
  9. While the chicken is simmering, cook 1 pound of angel hair pasta according to the package instructions. Drain and keep warm.
  10. To serve, place the cooked pasta on plates and top with the creamy chicken and sauce. Don’t forget to sprinkle with freshly chopped parsley for a finishing touch!
