- In a large skillet, add 2 tablespoons olive oil and heat it over medium-high. Once hot, gently place 4 chicken breasts into the skillet. Cook for about 3 to 5 minutes on each side, or until they turn a beautiful golden brown and are no longer pink in the center. This step is crucial for developing a nice crust.
- Once cooked, remove the chicken and set it aside on a plate. This allows you to prepare the sauce in the same skillet, which is packed with flavors from the chicken.
- In the same skillet, add the minced 3 garlic cloves and sauté them for about 30 seconds, until they become fragrant. Be careful not to burn them, as burnt garlic can turn bitter.
- Pour in 1 cup heavy cream, ½ cup chicken broth, the juice from one lemon, 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, and ½ cup grated parmesan cheese. Stir well to combine all the ingredients and create a creamy sauce.
- In a small bowl, mix 2 tablespoons cornstarch with 2 tablespoons water until smooth. This will serve as your thickening agent.
- Whisk the cornstarch slurry into the sauce and let it simmer for about 1 to 2 minutes over medium-high heat. You’ll notice the sauce starts to thicken, becoming rich and luscious.
- Carefully add the chicken back into the pan, coating it in the creamy sauce. Allow it to simmer for a couple more minutes to warm the chicken through.
- Once everything is well combined, taste the sauce and adjust seasoning if necessary. You can add a pinch more of salt or pepper if desired.
- Serve your Creamy Lemon Parmesan Chicken over pasta, rice, or alongside steamed vegetables for a complete meal. Enjoy every bite as you dive into this delightful dish!
