  • 2 tablespoons olive oil
  • 1 teaspoon black pepper freshly ground
  • 2 teaspoons sea salt
  • 1 tablespoon baking powder optional
  • 1 tablespoon parsley fresh, chopped for garnish

Method
 

  1. Preheat your oven to 425 F degrees. This high temperature is crucial for achieving that crispy finish.
  2. Line a large baking sheet with parchment paper. This prevents sticking and makes cleanup a breeze.
  3. Pat the chicken wings dry with paper towels. Removing excess moisture is essential for crispiness.
  4. Place the wings in a large bowl. It’s easier to toss them with the oil and seasonings later.
  5. Drizzle the wings with olive oil and toss well, making sure every piece is coated. This will help them brown beautifully.
  6. Sprinkle the wings with black pepper and sea salt, then toss again to ensure even seasoning.
  7. If you choose to use baking powder, sprinkle it over the wings and toss to coat. This ingredient is key to that crunch.
  8. Arrange the wings in a single layer on the prepared baking sheet. Overcrowding can lead to steaming instead of crisping.
  9. Bake for about 40 to 45 minutes. Keep an eye on them, and turn the baking sheet halfway through for even cooking.
  10. Once golden and crispy, sprinkle with more salt and pepper if desired. Garnish with chopped parsley for a fresh finish.

Notes

  • Tip 1: My wings already came pre-cut into wingettes and drumettes, but if they are not, remove the wing tip then cut them vertically through the joint. Discard the wing tip.
  • Tip 2: If your wings aren’t golden and crispy after 45 minutes, turn the broiler on and broil them for about 3 more minutes, watching them carefully as they could burn quickly.
  • Tip 3: Use sea salt. For the most refined taste, use sea salt. Table salt will work, but it won’t add the same depth in flavor.
  • Tip 4: Line the baking sheet. Do not forget to line your baking sheet. The skin of the chicken wings will stick to the pan.
