Method
 

  1. First, preheat your oven to 400 degrees Fahrenheit. This step is crucial as it ensures that your chicken cooks evenly and becomes beautifully crispy. While the oven heats up, line a cookie sheet with aluminum foil and spray it with nonstick spray. This will make cleanup a breeze!
  2. Next, in a medium-sized bowl, combine the honey and water. This mixture is the foundation for the glaze that will bring flavor to your chicken. Make sure to reserve 1/4 of the honey mix in a separate bowl for later.
  3. In another bowl, combine the remaining ingredients: whole-wheat panko breadcrumbs, Italian seasoning, cayenne pepper, paprika, garlic powder, red pepper flakes, kosher salt, and chili powder. Stir them together to create a flavorful coating for your chicken.
  4. Now, take your chunks of chicken and drop them into the honey mixture. Make sure that the honey coats all sides of the chicken pieces. This will help the spices adhere better, ensuring that every bite is packed with flavor.
  5. Once the chicken is well-coated, transfer the pieces into the spice and panko mix. Toss them around until they are evenly coated. The result should be chicken pieces that are golden and have a beautiful crust.
