Ingredients
  

  • 2 pieces Chicken Breasts sliced in half or 4 thin chicken breasts
  • 8 tablespoons Butter divided
  • ½ cup Italian Bread Crumbs
  • ½ cup Parmesan grated, divided
  • ¼ cup Flour
  • 2 pieces Zucchini medium, sliced
  • 2 cloves Garlic minced

Method
 

  1. In a large skillet over medium heat, melt 2 tablespoons of butter. You want the butter to be bubbly but not browned, as this will give a lovely flavor to your chicken.
  2. To prep the chicken, melt the remaining 4 tablespoons of butter in a shallow dish. This will help the chicken to stay moist and flavorful.
  3. In another shallow dish, combine the bread crumbs, parmesan, and flour. This mixture will create a deliciously crispy coating for your chicken.
  4. Dip each piece of chicken into the melted butter, ensuring it's fully coated, then dredge it in the bread crumb mixture. Press down gently to make sure the coating sticks well.
  5. Place the coated chicken in the hot skillet. Cook for about 3 to 4 minutes on each side, or until the outside is golden brown and crispy. The chicken should be cooked throughout, so you may want to check it for doneness.
  6. Once cooked, set the chicken aside on a plate. This will allow it to rest and retain its juices.
  7. Add 2 tablespoons of butter back into the skillet. Once melted, add the minced garlic and sauté for about a minute until fragrant.
  8. Next, add the sliced zucchini to the skillet. Sauté the zucchini for a few minutes until tender, stirring occasionally. Season with salt and pepper to taste, and sprinkle in 1 tablespoon of parmesan.
