Ingredients
  

  • 3 pounds chicken thighs
  • 1 tsp cumin
  • 1 Garlic clove minced
  • 1 Orange sliced
  • 1 lemon sliced
  • 1 lime sliced
  • 2 tbsp olive oil
  • ½ cup mojo sauce
  • 2 Garlic cloves
  • ¾ cup cilantro
  • cup mint
  • ½ cup olive oil

Method
 

  1. Start by placing the chicken thighs into a large mixing bowl. The thighs should be fresh and trimmed of excess fat to ensure a juicy outcome. This is the base of our flavorful dish.
  2. Add cumin and a minced garlic clove to the bowl. These two ingredients will infuse the chicken with rich flavors. Use your hands to rub the spices thoroughly over the chicken, ensuring every piece is well-coated.
  3. Next, pour in the mojo sauce, making sure each piece of chicken is generously coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 2 hours. This step is crucial for allowing the flavors to penetrate the chicken fully.
  4. While the chicken marinates, preheat your oven to 400 degrees Fahrenheit. This high temperature will help achieve a deliciously crispy skin.
  5. Once the marinating time is up, take the chicken out of the refrigerator. Place the marinated chicken thighs skin-side up in a baking pan. This positioning allows for even cooking and crisping of the skin.
  6. Lay the lemon, orange, and lime slices over the chicken thighs, adding even more flavor. The citrus will caramelize in the oven, enhancing the dish's overall taste.
  7. Drizzle the remaining olive oil over the chicken and citrus slices. This will help keep the chicken moist and add a beautiful sheen.
  8. Bake the chicken in the oven for 45 to 50 minutes, spooning the pan juices over the chicken every 15 minutes. This technique will ensure that the chicken remains moist and flavorful.
  9. When the chicken is golden brown and cooked through, remove it from the oven. Let it rest for several minutes to allow the juices to redistribute before serving.
  10. For the mojo sauce, place all the ingredients, except for the olive oil, into a blender. Blend until smooth, then slowly pour in the olive oil while blending on low. This will create a luscious sauce to drizzle over the chicken.

Notes

Don’t marinade the chicken for more than 2 hours. Once baked, let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
