Ingredients
  

  • 2 English cucumbers English cucumbers sliced
  • 3 avocados avocados cut into chunks
  • 1/4 cup red onion diced
  • 1/3 cup cilantro chopped
  • 3 tablespoons olive oil
  • 3 tablespoons lime juice
  • 1 teaspoon garlic minced
  • Kosher salt and pepper to taste

Method
 

  1. In a large bowl, combine sliced cucumbers, avocado, diced red onion, and chopped cilantro. I like to slice the cucumber leaving the skin on!
  2. In a small bowl, whisk together the olive oil, lime juice, and minced garlic.
  3. Pour the dressing over the salad ingredients and toss together.
  4. Season to taste with salt and pepper and enjoy!
