Ingredients
  

  • 1 pound boneless chicken thighs or breasts cut into bite-size pieces
  • ¼ cup yogurt
  • 2 tablespoons oil of choice
  • 1 tablespoon lemon juice
  • 3-4 cloves garlic minced
  • 1 teaspoon cumin EACH
  • 1 teaspoon coriander powder EACH
  • 1 teaspoon salt EACH
  • ½ teaspoon garam masala EACH
  • ½ teaspoon fenugreek EACH
  • ½ teaspoon curry powder EACH
  • ½ teaspoon chili powder EACH
  • ½ teaspoon turmeric EACH
  • ½ teaspoon black pepper EACH
  • ½ onion sliced or chopped
  • ½ bell pepper sliced or chopped
  • 1 package slider buns pack of 12
  • 1-2 cups shredded mozzarella cheese or cheese of choice
  • ½ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 tablespoon hot sauce, sriracha, or red chili sauce
  • 1 teaspoon Dijon mustard
  • 4 tablespoons butter melted
  • 4 cloves garlic minced
  • 2 tablespoons cilantro or parsley minced

Method
 

  1. First, let’s marinate the chicken. In a medium bowl, combine the chicken pieces, yogurt, oil, lemon juice, garlic, and all the spices including cumin, coriander powder, and salt. Gently mix everything together until the chicken is well-coated. Cover the bowl and let it marinate in the fridge for 30 minutes or even up to 48 hours if you have the time. The longer it marinates, the better the flavors will be!
  2. Next, it’s time to cook. Heat a heavy-duty pan over medium-high heat. Once it’s hot, add the marinated chicken mixture along with the onion and bell pepper. As the chicken cooks, keep an eye on it. You’ll want to stir occasionally for about 8 to 10 minutes until the chicken is cooked through, and everything is tender and fragrant. The colors and aromas should be mouthwatering!
  3. Now, let's make the sauce and herb butter. In a small bowl, whisk together all the ingredients for the sauce: mayonnaise, ketchup, and your choice of hot sauce. In another bowl, mix the melted butter with the minced garlic and chopped cilantro or parsley. This will add a delicious layer of flavor when you brush it on the sliders.
  4. Preheat your oven to 375ºF. While the oven is heating up, prepare a 9×13-inch baking dish by lining it with foil and coating it lightly with nonstick spray, oil, or butter. This will make cleanup much easier!
  5. Assemble your sliders. Slice the slider buns in half. Place the bottoms evenly into the prepared pan. Spread the sauce generously onto both sides of the rolls from the inside. Top with the chicken mixture and sprinkle a generous layer of mozzarella cheese over the chicken. Then, place the slider roll tops on top and press down slightly to ensure everything stays together.
  6. Finally, brush the top of the buns with the melted butter mixture. This will give them a beautiful golden color and irresistible aroma as they bake. Now, pop the dish in the oven and bake for about 15 minutes, or until the cheese is melted and bubbly. It’s hard to wait, but trust me, it’ll be worth it when you see those sliders golden and delicious!
  7. Once they’re ready, take them out of the oven and cover them with foil until you’re set to serve. You can let them cool for a few minutes, and then they’re ready to be devoured!

  • Storing: Store leftover sliders in an airtight container for 2-3 days.
  • Reheating: The best way to reheat leftover sliders is in the oven, so they crisp up and aren’t soggy. Place in the oven for 15-20 minutes at 375 degrees Fahrenheit. Or try them in the air fryer for about 4 minutes at 350 degrees F.
