- 1. Preheat your oven to 450° F. It’s essential to get the oven hot enough to achieve that perfect crisp on the chicken and sweet potatoes. While it’s heating, rub a sheet pan with a bit of olive oil to prevent sticking.
- 2. In a large bowl, mix the sliced chicken with the yellow curry powder, smoked paprika, chipotle powder, garlic powder, salt, and black pepper. Pour in 2 tablespoons of olive oil and toss everything to coat. Arrange the spiced chicken to one side of the prepared sheet pan.
- 3. Now it’s time to prepare the sweet potatoes. Toss the sliced sweet potatoes with another drizzle of olive oil, salt, and pepper. Spread them on the other side of the sheet pan, keeping everything spaced out for even cooking.
- 4. Place the sheet pan in the oven and bake for about 15 to 20 minutes. You’re looking for the chicken to be cooked through and the sweet potatoes to be tender. After 15 minutes, toss everything around to help crisp them both up a bit more and return to the oven for another 5 minutes.
- 5. While the chicken and sweet potatoes are roasting, let’s whip up the tahini sauce. In a jar, combine tahini, grated garlic, lemon juice, and 1/4 cup of water. Whisk until smooth and adjust the consistency by adding more water if needed. Season with a pinch of salt to taste.
- 6. Now, let’s make the salad! In a bowl, toss together the shredded lettuce, mixed herbs, thinly sliced shallot, and pepperoncini. This fresh mixture will add a delightful crunch to your gyros.
- 7. Once everything is cooked and ready, it’s time to assemble your Curry Chicken Gyro and Tahini Sweet Potatoes. Take a warm piece of naan and layer it with the roasted chicken, fresh salad, and a generous drizzle of Tzatziki sauce. Top it off with the tahini sauce for an extra flavor boost.
- 8. Serve the remaining sweet potatoes on the side or mixed in with the gyros for a comforting and fulfilling meal. Enjoy every bite!
