Ingredients

  • 1 ½ pounds Poached chicken breast
  • 1 cup Dill pickles
  • ¾ cup Celery
  • ½ cup Mayonnaise
  • ½ cup Sour cream
  • 2 tablespoons Pickle juice
  • 1 ½ teaspoons Onion powder
  • 1 teaspoon Kosher salt
  • ½ teaspoon Freshly ground black pepper
  • 4 sprigs Fresh dill

Equipment

  • Chef's Knife
  • Mixing Bowl
  • Whisk
  • Food Processor
  • Baking Sheet

Method

  1. Start by shredding the chicken. You can use two forks or cut the cooked chicken into 1-inch chunks, then place them in a food processor and pulse 3 to 4 times until shredded. If you prefer, you can also use a stand mixer fitted with a paddle and mix on low until the chicken is shredded. Transfer the shredded chicken to a large bowl and set aside.
  2. Add the chopped dill pickles and celery to the food processor and pulse 3 to 4 times until finely chopped. Then combine this mixture with the shredded chicken in the bowl.
  3. In a separate medium bowl, whisk together the mayonnaise, sour cream, pickle juice, onion powder, kosher salt, and freshly ground black pepper until well mixed. This creamy dressing is the key to bringing everything together!
  4. Pour the dressing over the combination of shredded chicken, pickles, and celery. Gently sprinkle in the fresh dill and mix everything well until all the ingredients are fully coated and combined. Take a moment to enjoy the vibrant colors and aroma of your creation.
  5. Finally, serve the delicious Dill Pickle Chicken Salad over a bed of crisp lettuce or on your favorite bread for a delightful sandwich. Either way, you're in for a treat!
