Ingredients

  • 1 ripe banana
  • 2 eggs
  • 2 tablespoons all-purpose flour
  • 1 tablespoon milk
  • ¼ teaspoon baking powder
  • 2 banana
  • 2 strawberries
  • 4 blueberries
  • 1 carrot

Equipment

  • Chef's Knife
  • Whisk
  • Blender
  • Frying Pan

Method

  1. Start by preparing the pancake batter. Place the ripe banana and eggs in a blender and blend until smooth, about 10 seconds. This will create a creamy base for your pancakes.
  2. Next, add the all-purpose flour, milk, and baking powder to the blender. Blend until just combined, which should take about 5 seconds. If the batter seems too loose, don’t worry—just add one extra tablespoon of flour to thicken it up.
  3. Heat a large nonstick pan over medium-low heat. Brush it lightly with a bit of butter to prevent sticking and enhance the flavor.
  4. Pour a ladle of pancake batter into the pan. Cook each pancake until small bubbles form on the surface, signaling they’re ready to flip. This should take about two minutes.
  5. Carefully flip the pancake and cook the other side for about one more minute. You want a nice golden-brown color on both sides.
  6. For each bunny face, you’ll want to make three pancakes: one large pancake (about 5 inches) and two smaller ones (around 1.5 inches). The sizes don’t have to be exact, but having one big and two small is key!
  7. Once the pancakes are cooked, transfer them onto a plate and let’s get creative with decorations!
  8. To create bunny ears, cut a banana in half horizontally and then again vertically. You’ll have two sets of bunny ears ready to go.
  9. Next, slice the remaining banana to create two sets of bunny eyes. For the teeth, cut two more slices into rectangles to form the bunny’s smile.
  10. For the noses, take the two strawberries and cut the ends off. Place these at the center of the pancakes for those adorable bunny noses.
  11. Lastly, cut the carrot into twelve thin strips. These will serve as the bunny’s whiskers, adding the final touch to your breakfast masterpiece!

Notes

  • Tip 1: Store leftover pancakes in an airtight container in the refrigerator. They will keep well for up to two days, so you can enjoy them again!
  • Tip 2: You can freeze the pancakes for future breakfasts. Just stack them with parchment paper in between to prevent sticking, and store in a freezer-safe bag.
  • Tip 3: Consider serving these pancakes with a side of yogurt or a fruit salad for added nutrition and flavor.
  • Tip 4: Feel free to add chocolate chips or nuts to the batter for a different twist on your bunny pancakes.
  • Tip 5: Adjust the size of your pancakes according to your family’s appetite. You can make smaller ones for kids or larger ones for adults!
