  • 2 tablespoons coconut oil
  • ¼ cup white chocolate
  • ½ teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. Begin by heating a large saucepan over medium heat. Make sure it’s big enough to hold all of your ingredients; this will help prevent any overflow when you mix everything together. Add marshmallows, white chocolate, and coconut oil into the pan. Stir continuously until everything has melted and combined smoothly. The mixture should become creamy and glossy.
  2. Once melted, remove the saucepan from the heat. Quickly stir in vanilla extract and a pinch of salt. This addition enhances the flavor and keeps your popcorn from being overly sweet.
  3. Now, it’s time to fold in the popped popcorn. Pour the popcorn into the saucepan and gently mix it with the marshmallow mixture. Be careful to coat the popcorn completely, ensuring every kernel is covered in the sticky goodness.
  4. Prepare your workspace by laying out a sheet of baking paper, parchment paper, or a non-stick silicone mat. This will be where you shape your popcorn balls. Make sure the surface is ready for the mixture!
  5. With your hands slightly greased with coconut oil, take handfuls of the coated popcorn mixture and roll them into balls. Aim for the size of a small fist, as these will resemble adorable bunny tails.
  6. Once all the mixture is rolled into balls, lay them out on your prepared surface. Allow the popcorn balls to harden completely; this should take about 15 to 30 minutes depending on your environment.
  7. Once the Easter Bunny Tails have hardened, transfer them into an airtight container for storage. They can be kept at room temperature, which helps maintain their chewy texture. Enjoy these delightful treats as a festive snack!

Notes

Be sure to remove any unpopped kernels before you add the popcorn to the recipe. It's awful to bite into a hard popcorn kernel. Using the method I've described the popcorn balls will have a soft chewy texture. If you would like them to be hard then you will ned to heat the melted marshmallow mixture until it reaches soft ball stage. You can use a candy thermometer to know when you are at the right temperature. The mixture can be a bit sticky when you are rolling the balls. I rub a little coconut oil into my hands before I start, but you could also use cooking spray. If you are making popcorn balls for a birthday party and what them to match a colour theme you can add food colouring when you add the vanilla extract and/or you can sprinkle on some sprinkles to the warm popcorn balls. Store your popcorn balls at room temperature in airtight containers for up to five days.
