Ingredients
  

  • 6 cups white or yellow corn tortilla chips
  • 1 pound chicken tenders
  • ½ cup all-purpose flour
  • 2 eggs

Method
 

  1. Preheat your oven to 425 degrees F. While it's warming up, grab a rimmed baking sheet and place a wire rack inside it. Coat the rack well with nonstick spray to prevent sticking.
  2. Next, add the tortilla chips to a food processor or blender and process them into fine crumbs. You should end up with about 1 cup of these crunchy bits. Pour the crumbs into a shallow dish or pie plate.
  3. In a second shallow dish, add the flour. This will create a delicious base for the tenders.
  4. In another shallow dish, crack the eggs and beat lightly with a fork until well mixed.
  5. Now it’s time to work with the chicken! Take one tender at a time and dredge it completely in the flour, ensuring it's covered well. Shake off any excess flour before moving on.
  6. Next, dip the floured chicken in the beaten eggs, making sure to coat it thoroughly.
  7. Finally, roll the chicken tender in the prepared tortilla crumbs, pressing gently to help the crumbs adhere. Place it on the prepared rack. Repeat this process with all the chicken tenders.
  8. If desired, sprinkle the tenders lightly with salt for extra flavor.
  9. Once all tenders are coated, bake for 14 to 15 minutes, or until they are completely cooked through and golden brown. You’ll know they're done when they reach an internal temperature of 165 degrees F.

Notes

  • Store: Store any leftover chicken in the fridge in an airtight container. Serve cold or warm briefly in a 350-degree-F oven or in the microwave for 15 to 30 seconds.
  • Rack Method: Do bake them on a wire rack as instructed. This allows air to circulate underneath so the tops and bottoms are perfectly crispy.
  • Coating Tips: Coat the chicken well in the flour, eggs, and crumbs to ensure the best results.
  • Crushing Chips: If using the tortilla chip option, be sure to totally crush them to create an even crumb.
  • Panko Salt: If using panko, add ¼ teaspoon salt.
  • Reheating: Reheat in the oven to return the chicken to crispy, or pack in a lunch and enjoy chilled.
  • Air Fryer: Coat the rack with nonstick spray. Prepare the chicken as directed in the recipe, then air-fry at 400 degrees F for 8 minutes, turning halfway through.
