Ingredients
  

  • 2 small or 1 large chicken breasts cut into 1 inch cubes
  • 1 cup broccoli florets
  • 1 cup bell peppers sliced or chopped (colors of choice)
  • 1 small zucchini sliced
  • 1/2 cup tomatoes sliced into large chunks, or grape tomatoes
  • 1/2 cup onion sliced or chopped
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning see note
  • 1 teaspoon garlic powder or fresh minced garlic
  • 1 teaspoon paprika optional
  • salt and pepper to taste

Method
 

  1. Preheat your oven to 400 degrees Fahrenheit. This step is crucial as it allows for even cooking of all ingredients. Your oven should be nice and hot before you start assembling the packets.
  2. In a large bowl or a ziplock bag, combine all the ingredients. This includes the chicken, broccoli, bell peppers, zucchini, tomatoes, onion, olive oil, Italian seasoning, garlic powder, paprika, salt, and pepper. Mix everything until it’s fully combined. Ensure that the chicken is evenly coated with the oil and seasonings.
  3. Next, cut out 2 squares of aluminum foil, each approximately 12 inches by 12 inches. This size should be just right for wrapping the ingredients neatly. Lay the squares flat on a sheet pan to catch any drips.
  4. Now, place half of the mixture on each square of foil. Try to distribute the ingredients evenly between the two packets. This ensures that both servings have the same flavor and variety.
  5. Gently fold the foil around the ingredients to form a tight seal. Make sure there are no holes or openings, as you want to trap all the steam inside while they cook.
  6. Place the packets in your preheated oven and bake for 20 minutes. During this time, the chicken will cook through, and the flavors will meld beautifully.
  7. After 20 minutes, carefully remove the packets from the oven. Be cautious of the steam that will escape when you open them. It’s a good idea to open them over the sink or a plate.
