In a large mixing bowl, combine creamy peanut butter, softened butter, vanilla extract, and powdered sugar. Use a spatula or electric mixer to mix until everything is well combined and creamy.
Scoop out portions of the mixture and roll them into balls about 1 inch in size. Place each ball on a cookie sheet lined with wax paper.
If the mixture seems too dry, add a tablespoon or two of milk to achieve the right consistency.
Press a toothpick into the top of each ball. Make sure to stick it in enough for it to hold but not too deep.
Place the cookie sheet in the freezer and chill the balls for at least 30 minutes or until they are firm.
While the balls are chilling, melt the semisweet chocolate chips. Stir frequently until the chocolate is smooth and melted.
Once the peanut butter balls are firm, remove them from the freezer. Dip each ball into the melted chocolate, ensuring it’s coated evenly.
Place the coated balls back onto the cookie sheet. Smooth over any holes left from the toothpick with your fingertip.
Refrigerate the dipped buckeyes until the chocolate hardens completely. This will take about 30 minutes.
