Method
- In a medium saucepan, combine white rice and stock. Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes until the rice is tender and water is absorbed.
- Once the rice is cooked, stir in the milk and butter. Heat over low until warmed through.
- Add the cheddar cheese and stir until melted and creamy. If it’s too thick, add a splash more milk.
- Stir in any finely grated vegetables or seasoning. Cook for another 1–2 minutes to soften.
- Let cool slightly before serving to toddlers.
Notes
- Tip 1: Peeling grated carrots can enhance their natural sweetness—unpeeled can taste a bit bitter.
- Tip 2: Sautéing grated veggies in a little butter before adding to the rice boosts flavor.
- Tip 3: For veggie-shy toddlers, stir through a spoonful of vegetable puree for extra nutrition.
- Tip 4: Frozen cauliflower rice can be added directly to the cooked rice for a mild veggie boost.
- Tip 5: Leftover cheesy rice can be frozen in silicone muffin trays for easy reheating.
