Ingredients
  

  • 1 cup white rice
  • 2 cups stock low sodium
  • ½ cup milk full fat or plant based
  • 1 cup cheddar cheese grated
  • 1 Tablespoon butter or oil
  • ½ cup vegetables finely grated (zucchini, carrot, sweet potato, pumpkin, broccoli, cauliflower)

Method
 

  1. In a medium saucepan, combine white rice and stock. Bring to a boil, then reduce heat to low. Cover and simmer for 12–15 minutes until the rice is tender and water is absorbed.
  2. Once the rice is cooked, stir in the milk and butter. Heat over low until warmed through.
  3. Add the cheddar cheese and stir until melted and creamy. If it’s too thick, add a splash more milk.
  4. Stir in any finely grated vegetables or seasoning. Cook for another 1–2 minutes to soften.
  5. Let cool slightly before serving to toddlers.
