Ingredients
  

  • ½ cup pine nuts
  • 2 ounces basil (fresh, about 2 cups packed)
  • ½ cup Parmesan cheese (grated)
  • ½ cup olive oil
  • 3 cloves garlic (peeled)
  • ¼ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)

Method
 

  1. Toast the pine nuts: Start by heating a small skillet over medium heat. Add the pine nuts and watch them closely as they toast. This should take about 2 to 3 minutes. You'll know they’re ready when they start to turn a golden brown and release their nutty aroma. Be careful not to let them burn!
  2. Blend all the ingredients: In a food processor, combine the toasted pine nuts, fresh basil, grated Parmesan cheese, peeled garlic, and olive oil. Pulse the mixture in short bursts of 5 to 10 seconds. Continue blending until the texture is smooth, but still has some body. If the pesto seems too thick or difficult to blend, add a couple of tablespoons of water or more olive oil to reach your desired consistency.
  3. Adjust seasoning: Once blended, taste your pesto. This is the moment to adjust the flavor. Add salt and pepper as needed, mixing again briefly to incorporate. If you’d like a stronger garlic flavor, feel free to add another clove.

Notes

  • Recipe yields: about 1½ cups.
  • Wash your greens: Always wash your greens properly, so give that basil a good rinse with cold water and dry it with a salad spinner or between layers of paper towels.
  • Garlic levels: Feel free to adjust the garlic in the recipe. If you want less garlic, start with 1 clove and taste.
  • Toasting nuts: Always toast your pine nuts or whatever nuts you decide to go with. Toasting enhances their flavor, giving you a tastier sauce.
  • Freezing: I like to fill an ice cube tray with my pesto and place it in the freezer for a quick pop of flavor in dishes that are ready on hand.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to a week or up to 3 months in the freezer.
