Ingredients

  • 1 sheet frozen puff pastry thawed
  • 1 egg egg
  • 2 teaspoons water
  • sparkling sugar optional
  • 1 pint strawberries washed, hulled, and sliced into 3-4 slices each
  • ¼ cup strawberry jam
  • ¾ cup white sugar divided
  • 4 ounces mascarpone cheese
  • 4 ounces whipped cream fresh whipped cream or cool whip
  • ice cream for garnish, optional

Equipment

  • Pre-Cut Parchment Paper
  • Baking Sheets
  • Nordic Ware Aluminum Half Sheet Pans
  • Mixing bowl set

Method

  1. Preheat your oven to 400°F (200°C). This is an important step that ensures your puff pastry will rise beautifully and achieve that golden brown color.
  2. On a parchment-lined baking sheet, roll out the puff pastry dough into a large rectangle. Aim for about a quarter of an inch thick. The more even your thickness, the better the tart will bake.
  3. In a small bowl, whisk together the egg and water. This mixture is your egg wash, which helps the pastry achieve a gorgeous shine and color.
  4. Use a knife to score a border around the edge of the puff pastry, about three-quarters of an inch from the edge. This will create a beautiful raised edge after baking.
  5. Using a fork, pierce the inside of the tart several times. This step prevents the pastry from puffing up too high in the center while it bakes.
  6. Brush the scored border of the pastry with the egg wash. Make sure to cover it evenly for that beautiful golden finish.
  7. If desired, sprinkle the sparkling sugar over the border for an extra touch of sweetness and a pretty finish.
  8. Bake the pastry in the preheated oven for 20 minutes, or until it’s golden brown and puffed up nicely. Keep an eye on it to prevent burning.
  9. Once the pastry is done, set it aside to cool on a wire rack. This helps maintain its crispiness.
  10. In a large bowl, stir together the whipped cream, half a cup of white sugar, and mascarpone cheese until well blended. The mixture should be smooth and creamy.
  11. In a separate bowl, mix the sliced strawberries with the remaining white sugar and strawberry jam. This step allows the strawberries to release their juices and create a lovely syrup.
  12. Once the puff pastry has cooled, spread the cream mixture over the top evenly. This creamy layer will serve as a base for the strawberries.
  13. Top the cream layer with the prepared strawberries. Arrange them in a beautiful pattern for a stunning presentation.
  14. Keep the tart refrigerated until you're ready to slice and serve. This helps the flavors meld together.
  15. For an indulgent touch, serve each slice with a scoop of ice cream. Enjoy your delicious creation!

Notes

  • Watch for the Puff: Ensure the puff pastry dough is well-thawed before rolling it out, as this helps achieve that flaky texture.
  • Perfectly Sweet Strawberries: Choose ripe, juicy strawberries for the best flavor. You can taste one before using!
  • Chill the Cream: For a fluffier filling, chill the whipped cream and mascarpone cheese before mixing.
  • Serving Temperature: The tart tastes best when served cold, so remember to chill it before presenting it to your guests.
