Notes

  • Tip 1: Store leftover sandwiches in an airtight container in the refrigerator. They are best enjoyed fresh, but they can last up to two days.
  • Tip 2: This sandwich isn’t ideal for freezing due to the vegetables’ textures. However, you can freeze the herbed goat cheese mixture for up to a month.
  • Tip 3: This sandwich pairs wonderfully with a light salad or a cup of soup for a complete meal.
  • Tip 4: For a gourmet touch, serve with a drizzle of balsamic reduction or a sprinkle of microgreens on top.
  • Tip 5: Feel free to switch out the veggies based on what's available. Try adding roasted bell peppers or arugula for a different flavor profile.
  • Tip 6: Substitute the goat cheese with a plant-based cheese or hummus for a vegan version.
