Ingredients
  

  • 2 lbs Yukon gold potatoes peeled and cubed
  • 4 large garlic cloves peeled and halved
  • 1/4 cup light sour cream
  • 1/2 cup chicken broth sub vegetable broth for vegetarian
  • 1/4 cup fat free milk
  • 1 tbsp whipped butter
  • to taste kosher salt
  • to taste fresh ground black pepper
  • 1 tbsp fresh herbs such as parsley, thyme or chives

Method
 

  1. Put the potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil.
  2. Cover and reduce heat. Simmer for 20 minutes or until potatoes are tender.
  3. Drain and return potatoes and garlic to pan over low heat. Add sour cream and remaining ingredients. Using a masher, mash until smooth and if it's too watery, let it cook a few minutes until the texture is perfect.
  4. Season with salt and pepper to taste. Garnish with herbs.

  • Storage: Store leftovers in an airtight container in the fridge for up to three days. When reheating, add a splash of milk to restore creaminess.
