Ingredients
  

  • 2 lbs chicken wings flats and drumettes, party wings
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 tablespoon oregano fresh, chopped
  • 1 tablespoon rosemary fresh, chopped
  • 1 tablespoon thyme fresh, chopped
  • ½ teaspoon dried cumin
  • 1 teaspoon Kosher salt
  • ½ teaspoon black pepper
  • Vegetable or canola oil for frying
  • ½ cup unsalted butter 1 stick
  • 2 cloves garlic finely minced
  • 2 tablespoons hot sauce Frank's, or your favorite wing sauce
  • ¼ cup chicken stock
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • ¼ cup Parmesan cheese grated
  • Homemade blue cheese for serving

Method
 

  1. Start by patting the chicken wings dry with a towel. This step is crucial as it helps achieve a crispy skin when frying. Place the wings in a large bowl, ensuring they have enough space to be coated evenly.
  2. In a medium bowl, combine the olive oil, lemon juice, oregano, rosemary, thyme, cumin, Kosher salt, and black pepper. Using a fork, stir the mixture until all the ingredients are well blended.
  3. Pour this flavorful mixture over the wings. With your hands, mix the wings until they are completely coated in the marinade. This is where the magic begins, as the herbs and spices cling to the wings. Once coated, transfer the wings to a 9x13-inch dish or a large zipper bag. Cover with plastic wrap or seal the bag and place in the refrigerator for at least 1 hour or overnight for maximum flavor.
  4. When you’re ready to cook, heat a large sturdy skillet or deep fryer with vegetable or canola oil to 350°F. This is the perfect frying temperature for getting that crispy finish! While the oil is heating up, preheat your oven to 425°F.
  5. Once the oil is hot, carefully drop the wings into the oil in batches. Fry each batch for about 8 minutes, turning them occasionally with metal tongs. You’ll know they’re ready when they’re golden and crispy. Remove them from the oil and place them on a baking sheet lined with paper towels to drain excess oil. Repeat this step until all wings are cooked.
  6. Once the last batch is fried, place the baking sheet with the wings into the preheated oven and bake for 15 minutes. This will help them cook through while maintaining that delicious crunch.
  7. Meanwhile, in a medium saucepan, add the unsalted butter, hot sauce, chicken stock, onion powder, garlic powder, Kosher salt, and black pepper. Stir in the freshly minced garlic and simmer gently for approximately 15 minutes. This step allows the flavors to meld beautifully, creating a rich sauce.
  8. Once the wings are done baking, transfer them to a large heatproof bowl. Pour the garlic sauce over the wings and toss them gently until they are fully coated in that heavenly sauce.
  9. Finally, add the Parmesan cheese, tossing the wings again until they are well coated. Serve your Garlic Parmesan Chicken Wings immediately with homemade blue cheese dressing on the side. Enjoy!
